These days we like to think we are a lot more sophisticated than that and blokes (def: (n), australian male) will proudly marinate and prepare all manner of culinary fare in their outdoor kitchen.

Prawns and barbecues make a perfect marriage. As Paul Hogan once said, “so come on over and we’ll slip another shrimp on the barbie for ya”. Of course, he was adopting American terminology for what Aussies have always referred to as prawns, just so there’d be no confusion. Prawns not only suit barbecuing to a tee, they also marry well with numerous flavours but arguably some of our favourites would have to include, garlic, chilli and fresh coriander (cilantro).

What you’ll need:-

Serves 4 as an entrée

700g green Prawns, peeled and deveined, tails intact
1 lemon, cut into wedges

Coriander and Pepper Paste
1 bunch coriander, leaves, roots and stems all roughly chopped
7 cloves garlic, roughly chopped
2 teaspoons black peppercorns
2 teaspoons white peppercorns
2 teaspoons salt flakes
2 tablespoons lemon juice
2 tablespoons extra virgin olive oil

Method:-

To make the Pepper and Coriander Paste: place all the ingredients in a food processor and blend into a coarse paste.

Toss the prawns in the paste and marinate for about 20 minutes.

Heat a barbecue or char-grill plate.

Place the Prawns on the barbecue and cook for 1-2 minutes until well coloured, then turn and cook for another minute or two until they are just opaque all the way through.

Serve immediately with lemon wedges.
